The Vineyard
Before it was Dalton’s Padock, the property was home to the well respected winery, Woodgate Wines. Established in 2006, it is family owned and operated and while the property since changed hands, the wine and the brand live on today.
The fruit for their wines have been sourced from the 3 hectare estate vineyard on the property and from selected parcels of fruit from local growers. The wine portfolio is constantly changing with the ongoing introduction of new and exciting styles and as such will always remain fresh, vibrant, new and individualistic.
The Winemaker
Mark Aitken was among the first class of graduates of the Bachelor of Science degree in Viticulture and Oenology at Curtin University in 2001. As a mature age student he finished dux and received the Talijancich Radoux scholarship going on to complete a vintage in Chateaux Lynch Moussas in Paulliac, France (Bordeaux) in 2002.
Since that time he and his family has settled in the Manjimup area and spent the last ten years making wine in the Pemberton/Manjimup district firstly with Chestnut Grove (2002 -2005) and then since as a self employed contract winemaker and consultant.
Over the years he has been responsible for making wine for numerous local producers including Truffle Hill, Lost Lake, Olde Eastbrook, Flamebird, Middlesex 31 and many others.
The Region
Manjimup is emerging as one of Australia’s pre-eminent food production areas.
Fresh air, fresh water, productive soils and cool/moderate climate make the region suitable for all kinds of fresh fruit and vegetable production. It is the largest producer of French Black Truffles in the southern hemisphere, marron, the local fresh water crayfish are found in all farm dams, and Perch and Trout abound in the local river systems and of course the region is suitable for high quality wine production.
It is becoming a great tourist destination for those who love tall green forests, outdoors activities and gourmet food.
Tempranillo 2021
This will only impress Tempranillo lovers.
A complex, very old world style with a leathery, earthy, savoury finish.
Cherry fruits are the showcase of this fantastic red wine.
Excellent accompaniment to Lamb with herbs, Tapas, Antipasta, Barbecue grilled meats and Mexican food.
Manjimup Reserve Pinot Noir 2021
The 2021 Reserve Pinot Noir ‘The Black George’
Woodgate winery in Manjimup has a long history of producing exceptional quality Pinot Noir.
With a focused, elegant palate and delicate sweet core, showing lashings of red berry fruits and well integrated oak. Delightful forest floor and mushroom influences. Bright balanced acidity producing a silky finish with great length. A complex age worthy wine.
Good food matching with duck, game, mushrooms or good quality duck pate.
Cellar: 7-10 years.
Reserve Cabernet Sauvignon Merlot
The 2020 vintage is absolutely delicious, with loads of dark dusty fruits and velvety tannins, linger on the palate with perfect length.
Selected from the best barrels of the vintage, spending it’s time fermenting in French oak of course, producing fragrant cedar nuances/spice.
It’s a medium to full bodied blend which will impress. Will continue to develop in bottle for another 10 years!
Matches well to robust hearty dishes, red meats, cheeses and cheesy dishes, pizza.
Bojangles
Blanc de Blancs
From 100% hand-picked Chardonnay grapes. The wine undergoes a traditional secondary fermentation in the bottle. A minimum of 3 years on yeast lees, resulting in a delightful sparkling wine.
This Sparkling shows complexity and personality, with zesty citrus sorbet on the nose. A fresh palate, showing yeasty & honey nuances.
With vibrant mineral acidity and a light and refreshing palate, this sparkling will compliment most rich and creamy foods, which along with the bubbles, is a lovely palate cleanser.
Sauvignon Blanc Semillon
The blend comprises 57% Sauvignon Blanc and 43% Semillon, resulting in a harmonious combination that showcases the best qualities of both varietals.
Light straw with vibrant lemon hues, brilliant clarity. Very intense aromas of fresh passionfruit, lime and honeydew melon. Vibrant approachable palate, elegant balanced bursting with generous flavour and nice length, framed by refreshing acidity. Light to medium bodied, crisp, aromatic white wine, matches well to chicken, prawns, seafood.
NV Reserve Liqueur Muscat
Matured in very old oak barrels (10 years plus) which allows natural aromatics to shine and develop over time. Using modified ‘solera’ system, with blends made across numerous vintages.
Fragrant fresh aromas of floral musk, dates and dried figs. Lingering honey, butterscotch and raison. Matches well to drinking near the fire. Goes with decadent deserts or blue cheese.
